Homemade Muesli

Hearty, healthy homemade muesli that is packed full of goodness and contributes towards your 5 a day and fibre intake.

Serves: 2

Preparation: 5 mins Cooking Time: 15-30 mins

Ingredients

  1. 2 handfuls of rolled oats

  2. 1 tsp coconut oil melted

  3. 1 tsp honey

  4. 4 tbsp milk/water

  5. 1 handful sultanas/dried apricots/chopped dates etc…

  6. 1 handful of a mix of nuts e.g. almonds, hazelnuts

  7. Optional: Seeds, e.g. sunflower seeds.

  8. Pinch of cinnamon (optional)

Method

  1. Preheat oven to 180°C and line a baking tray with parchment paper

  2. Mix together the dry ingredients excluding the dried fruit – oats, nuts, seeds and cinnamon.

  3. In a separate bowl, mix together the oil, honey and milk in a small bowl until well combined

  4. Drizzle the mixture over the dry ingredients and mix until well combined.

  5. Spread mixture over the lined baking tray and bake in the oven for 15-30 minutes, stirring occasionally to allow an even bake. Check regularly as the mixture can easily overbrown. Once golden brown, the mixture is ready.

  6. Cool on the tray then combine with the dried fruit and transfer to an airtight container for storage.

  7. Serve with semi-skimmed/skimmed milk (reduced fat but same amount of calcium) or try Best of Both (BOB) - a fat-free skimmed milk that tastes as good as semi-skimmed.

  8. This muesli can also be served with yogurt and an optional drizzle of honey.
